The Culinary Adventures Continue

Because three out of four U.S. consumers eat spicy foods at least once per week, successful companies will explore new international sources of bold and spicy flavor. Internationally-inspired products will deliver bold flavors, diversity, portability and convenience.

From Hispanic and African sources, popular chili peppers are peri peri, green chili, jalapeño, chipotle, cayenne, habanero, paprika, aji amarillo and ancho. From Asian sources, sriracha, gochujang and sichuan pepper are used to flavor protein and vegetarian entrees. From Middle Eastern sources, a strong trend is the use of harissa paste. From India and Pakistan, Kashmiri masala paste and jalfrezi curry are popular.
